Ingredients

– 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

– 2 yellow bell peppers, sliced

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tablespoon olive oil

– 1 teaspoon ground cumin

– 1 teaspoon chili powder

– 1 teaspoon dried oregano

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper

– 1 cup chicken broth

– Juice of 1 lime

– Salt and pepper to taste

– Chopped cilantro for garnish


Instructions

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is lightly browned on all sides.
