Description

Tender and juicy chicken thighs coated in a sweet and tangy cider glaze, making for a quick and easy weeknight dinner that’s bursting with flavor.


Ingredients

– 6 bone-in, skin-on chicken thighs

– 1/2 cup apple cider

– 1/4 cup brown sugar

– 2 tbsp Dijon mustard

– 1 tsp garlic powder

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. Preheat the oven to 400°F.

2. In a small bowl, whisk together the apple cider, brown sugar, Dijon mustard, garlic powder, dried thyme, salt, and pepper.

3. Heat a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-6 minutes until the skin is crispy.

4. Flip the chicken and pour the cider glaze over the top. Transfer the skillet to the oven and bake for 20-25 minutes, basting the chicken with the glaze halfway through, until the chicken is cooked through and the glaze is caramelized.

5. Serve the cider glazed chicken thighs immediately, spooning any extra glaze from the pan over the top.

Notes

For a deeper flavor, marinate the chicken in the cider glaze for 30 minutes to an hour before cooking. You can also use boneless, skinless chicken thighs, but adjust the cooking time accordingly. Serve with roasted vegetables or a fresh salad for a complete meal.
