Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 medium apples, peeled, cored, and chopped
– 1/4 cup brown sugar
– 2 teaspoons ground cinnamon
Instructions
1. – Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. – In a medium bowl, whisk together the flour, baking soda, and salt.
3. – In a large bowl, beat the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
4. – Fold the dry ingredients into the wet ingredients just until combined. Fold in the chopped apples.
5. – In a small bowl, mix together the brown sugar and cinnamon.
6. – Spread half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Repeat with the remaining batter and cinnamon-sugar.
7. – Use a knife to swirl the cinnamon-sugar mixture through the batter.
8. – Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a crunchier topping, sprinkle the cinnamon-sugar mixture on top of the batter instead of swirling it in. Serve warm or at room temperature.
