Ingredients
– 4 cups chicken or vegetable broth
– 1 onion, diced
– 2 carrots, sliced
– 2 celery stalks, sliced
– 3 garlic cloves, minced
– 2 tablespoons fresh parsley, chopped
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions
1. In a large pot, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.
2. Add the garlic and cook for an additional minute, until fragrant.
3. Pour in the broth and stir in the fresh parsley and dried thyme. Season with salt and pepper to taste.
