Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 tablespoon olive oil

– 3 garlic cloves, minced

– 1 tablespoon grated ginger

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon red pepper flakes (optional)

– 1 (13.5 oz) can coconut milk

– 2 cups chicken broth

– 1 cup uncooked long-grain white rice

– 1/2 cup frozen peas

– 2 tablespoons chopped fresh cilantro, plus more for garnish

– Salt and freshly ground black pepper, to taste

– Lime wedges, for serving


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.

2. Add the chicken and cook, stirring occasionally, until lightly browned, about 3-4 minutes.

3. Add the onion, garlic, ginger, cumin, coriander, and red pepper flakes (if using). Cook, stirring frequently, until the onion is softened, about 3-4 minutes.

4. Stir in the coconut milk, chicken broth, and rice. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is mostly absorbed.
