These Coconut Rum Snow Squares are a delightful tropical treat – creamy, coconut-y bars with a hint of warm rum flavor. They’re simple to make and perfect for parties, holidays, or anytime you need an island-inspired indulgence.
Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 tablespoon dark rum
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 1/2 cups sweetened shredded coconut, plus more for topping
Instructions
1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan.
2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the rum and vanilla.
3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the 1 1/2 cups of shredded coconut.
4. Spread the batter evenly into the prepared baking pan. Sprinkle the top with additional shredded coconut.
5. Bake for 25-30 minutes, until the center is set. Allow to cool completely before cutting into squares.
6. Dust the tops with powdered sugar before serving, if desired.
Notes
For a stronger rum flavor, you can increase the amount of rum to 2 tablespoons. Store the bars in an airtight container at room temperature for up to 1 week.
