Ingredients
– 4 cod fillets
– 3 medium potatoes, diced
– 2 tablespoons olive oil
– 3 garlic cloves, minced
– 1 tablespoon fresh rosemary, chopped
– 1 cup heavy cream
– 1/2 cup chicken or vegetable broth
– Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large oven-safe skillet, heat the olive oil over medium-high heat.
3. Season the cod fillets with salt and pepper, then sear them in the hot skillet for 2-3 minutes per side until lightly browned.
4. Remove the cod fillets from the skillet and set aside.
