Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 large egg

– 2 teaspoons instant coffee powder

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt


Instructions

1. Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper.

2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

3. Beat in the egg, instant coffee powder, and vanilla extract until well combined.

4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6. Scoop the dough by the tablespoonful and roll into balls. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 12-15 minutes, or until the cookies are lightly golden brown on the edges.

8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store the cooled cookies in an airtight container at room temperature for up to 1 week. For a richer coffee flavor, increase the amount of instant coffee powder to 1 tablespoon.
