Ingredients
– 2 cups fresh corn kernels, from about 4 ears of corn
– 2 cups heavy cream
– 1 cup whole milk
– 3/4 cup granulated sugar
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract
Instructions
1. – In a blender, puree the corn kernels until smooth.
2. – In a medium saucepan, combine the corn puree, heavy cream, milk, sugar, and salt. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture begins to steam, about 5 minutes.
3. – Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours, or until completely chilled.
4. – Pour the chilled corn mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 20-25 minutes.
5. – Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
