Description

Ingredients

– 1 cup all-purpose flour

– 1 cup cornmeal

– 1/2 cup granulated sugar

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, melted

– 1 large egg

– 1/4 cup milk


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the all-purpose flour, cornmeal, granulated sugar, baking powder, and salt.

3. In a separate bowl, combine the melted butter, egg, and milk. Mix well.

4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

5. Scoop rounded tablespoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

6. Bake for 12-15 minutes, or until the cookies are lightly golden brown on the edges.

7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a sweeter cookie, you can increase the sugar to 3/4 cup. These cookies also pair well with a dusting of powdered sugar on top.
