Ingredients
– 1 cup cottage cheese
– 4 large eggs
– 1/4 cup coconut flour
– 1 teaspoon baking powder
– 1/2 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 cup fresh blueberries
Instructions
1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
2. In a large bowl, beat the cottage cheese and eggs together until well combined.
3. Add the coconut flour, baking powder, vanilla, and salt. Mix until a smooth batter forms.
4. Gently fold in the fresh blueberries.
5. Pour the batter into the prepared loaf pan and bake for 25-30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
6. Allow the bread to cool in the pan for 10 minutes before removing and slicing.
Notes
For best results, use full-fat cottage cheese. You can also try other fresh or frozen berries in place of the blueberries. The bread can be stored in an airtight container in the refrigerator for up to 5 days.
