Description

This Cowboy Soup Recipe is a hearty and comforting dish that’s perfect for a quick weeknight dinner. Packed with tender beef, vegetables, and a rich, savory broth, it’s a true crowd-pleaser that’s ready in just 30 minutes.

Ingredients

– 1 lb beef stew meat, cubed

– 1 onion, diced

– 3 carrots, peeled and sliced

– 2 celery stalks, sliced

– 2 cans (14.5 oz each) diced tomatoes

– 4 cups beef broth

– 2 tbsp Worcestershire sauce

– 1 tsp garlic powder

– 1 tsp smoked paprika

– 1 tsp dried thyme

– Salt and pepper to taste

Instructions

1. – In a large pot or Dutch oven, brown the beef over medium-high heat until no longer pink.

2. – Add the onion, carrots, and celery, and sauté for 5 minutes until the vegetables are tender.

3. – Pour in the diced tomatoes, beef broth, Worcestershire sauce, garlic powder, smoked paprika, and dried thyme. Stir to combine.

4. – Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the beef is tender and the flavors have melded.

5. – Season with salt and pepper to taste.

6. – Serve hot, garnished with fresh herbs if desired.

Notes

For a thicker soup, you can mash some of the vegetables against the side of the pot. If you prefer a spicier soup, add a dash of cayenne pepper or hot sauce.
