Ingredients

– 1 lb crab meat, lump or claw

– 2 tbsp butter

– 1 onion, diced

– 2 stalks celery, diced

– 2 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 2 tsp Old Bay seasoning

– 1 tsp dried thyme

– Salt and pepper to taste


Instructions

1. In a large pot, melt the butter over medium heat.

2. Add the diced onion and celery, and sauté for 5-7 minutes, until softened.

3. Stir in the minced garlic and cook for an additional minute.

4. Pour in the broth and heavy cream, and bring the mixture to a simmer.

5. Add the Old Bay seasoning, dried thyme, and a pinch of salt and pepper.

6. Gently fold in the crab meat and let the soup simmer for 10-15 minutes, until heated through.

7. Taste and adjust seasoning as needed.

8. Serve the Crab Soup hot, garnished with additional herbs if desired.

Notes

For a thicker soup, you can make a roux by melting an additional 2 tbsp of butter in the pot, then whisking in 2 tbsp of all-purpose flour before adding the broth and cream. This will create a rich, velvety texture. You can also use a combination of lump and claw crab meat for a variety of textures.
