Ingredients
– 3-4 lb beef roast (such as chuck or rib eye)
– 1 cup fresh or frozen cranberries
– 1/2 cup balsamic vinegar
– 1/4 cup brown sugar
– 3 cloves garlic, minced
– 2 tsp fresh rosemary, chopped
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a small saucepan, combine the cranberries, balsamic vinegar, brown sugar, garlic, rosemary, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the cranberries have softened and the sauce has thickened.
3. 3. Place the beef roast in a roasting pan or baking dish. Pour the cranberry-balsamic sauce over the top, ensuring the roast is fully coated.
4. 4. Roast the beef for 1-1.5 hours, or until it reaches your desired doneness. Baste the roast with the sauce every 20 minutes.
5. 5. Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
6. 6. Serve the Cranberry Balsamic Roast Beef with the pan juices spooned over the top.
Notes
For best results, use a meat thermometer to ensure the roast is cooked to your preferred doneness. The internal temperature should reach 125°F for medium-rare, 135°F for medium, or 145°F for medium-well. You can also adjust the cooking time based on the size and cut of your roast.
