Ingredients
– 12 oz fresh cranberries
– 1 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1 tbsp orange zest
– 1/4 tsp salt
Instructions
1. 1. In a medium saucepan, combine the cranberries, sugar, and 2 tbsp water. Bring to a simmer over medium heat and cook for 10-12 minutes, stirring occasionally, until the cranberries have burst and the mixture has thickened.
2. 2. Remove the pan from heat and let the cranberry mixture cool slightly. Transfer to a food processor and blend until smooth.
3. 3. Add the softened butter, orange zest, and salt. Blend again until well combined and creamy.
4. 4. Transfer the Cranberry Butter to an airtight container and refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
The Cranberry Butter can be stored in the refrigerator for up to 2 weeks. It also freezes well for up to 3 months. Bring to room temperature before serving.
