Description

These Cranberry Curd Bars are a delightful holiday treat with a rich, creamy cranberry filling nestled between a buttery shortbread crust and a crumbly topping. They’re easy to make and perfect for sharing with family and friends.


Ingredients

– 1 1/2 cups all-purpose flour

– 1/2 cup unsalted butter, softened

– 1/3 cup granulated sugar

– 1/4 teaspoon salt

– 1 cup fresh or frozen cranberries

– 3/4 cup granulated sugar

– 2 large eggs

– 2 tablespoons all-purpose flour

– 1 tablespoon lemon juice


Instructions

1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan.

2. In a medium bowl, combine the 1 1/2 cups flour, softened butter, 1/3 cup sugar, and salt. Mix until a crumbly dough forms.

3. Press the dough into the prepared baking pan, making sure to cover the bottom evenly.

4. In a food processor, pulse the cranberries, 3/4 cup sugar, eggs, 2 tablespoons flour, and lemon juice until smooth.

5. Pour the cranberry curd filling over the prepared crust.

6. Bake for 30-35 minutes, or until the filling is set and the edges are lightly golden.

7. Allow the bars to cool completely before cutting and serving.

Notes

For best results, use fresh cranberries. Frozen cranberries can also be used, but may result in a slightly more tart filling.
