Ingredients

– 1 sheet puff pastry, thawed

– 8 oz cream cheese, softened

– 1/2 cup crumbled feta cheese

– 1/2 cup fresh cranberries, chopped

– 2 tbsp granulated sugar

– 1 tsp dried thyme


Instructions

1. – Preheat oven to 400°F (200°C).

2. – Roll out the puff pastry sheet on a lightly floured surface into a 12×9-inch rectangle.

3. – In a medium bowl, mix together the cream cheese, feta cheese, chopped cranberries, sugar, and dried thyme until well combined.

4. – Spread the cream cheese mixture evenly over the puff pastry, leaving a 1-inch border.

5. – Starting from the long side, tightly roll up the puff pastry into a log.

6. – Slice the log into 1-inch thick pinwheels and place them on a parchment-lined baking sheet, spacing them about 1 inch apart.

7. – Bake for 18-22 minutes, or until the pinwheels are golden brown.

8. – Remove from the oven and let cool for 5 minutes before serving.

Notes

For a festive touch, lightly dust the baked pinwheels with powdered sugar. These pinwheels can be made in advance and stored in the refrigerator for up to 3 days.
