Ingredients
– 1 cup unsalted butter, softened
– 2 cups all-purpose flour
– 1/2 cup granulated sugar
– 1/4 teaspoon salt
– 1 (12 oz) package fresh or frozen cranberries
– 1 cup granulated sugar
– 3 large eggs
– 2 tablespoons all-purpose flour
– 2 tablespoons freshly grated lemon zest
– 1/4 cup fresh lemon juice
Instructions
1. – Preheat oven to 350°F. Grease a 9×13-inch baking pan.
2. – In a large bowl, beat the butter with an electric mixer until creamy. Add the 2 cups flour, 1/2 cup sugar, and salt, and mix until a dough forms.
3. – Press the dough evenly into the prepared baking pan.
4. – In a medium bowl, combine the cranberries, 1 cup sugar, eggs, 2 tablespoons flour, lemon zest, and lemon juice. Spread the cranberry mixture over the crust.
5. – Bake for 45-50 minutes, or until the center is set. Allow to cool completely before cutting into bars.
