Description
Tender chicken thighs cooked in a sweet and tangy cranberry-orange sauce, making for a delicious and easy weeknight dinner.
Ingredients
– 1 pound boneless, skinless chicken thighs
– 1 cup fresh or frozen cranberries
– 1/2 cup orange juice
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Season the chicken thighs with salt and pepper.
2. Heat a large skillet over medium-high heat and add the chicken. Cook for 3-4 minutes per side until browned.
3. Add the cranberries, orange juice, brown sugar, garlic, and thyme to the skillet. Stir to combine.
4. Reduce heat to low, cover and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
5. Serve the Cranberry Orange Chicken immediately, garnished with fresh thyme if desired.
Notes
This dish can be served over rice, pasta, or with roasted vegetables for a complete meal. The sauce can also be used to baste chicken or pork during the last 10 minutes of cooking.
