Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, melted

– 3/4 cup granulated sugar

– 2 large eggs

– 1 cup cranberry sauce

– 1/2 cup milk


Instructions

1. – Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.

2. – In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. – In a separate bowl, whisk together the melted butter, sugar, and eggs until well combined.

4. – Fold the wet ingredients into the dry ingredients, being careful not to overmix.

5. – Gently fold in the cranberry sauce and milk until just combined.

6. – Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

7. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

8. – Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a festive touch, top the muffins with a sprinkle of powdered sugar or a drizzle of glaze. You can also use leftover cranberry sauce or jelly in place of the cranberry sauce in the recipe.
