Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 large leeks, sliced into rounds
– 2 cloves garlic, minced
– 2 tbsp fresh thyme, chopped
– 1 cup heavy cream
– 1 tsp salt
– 1/2 tsp black pepper
– 1 pre-made pie crust
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a large skillet, sauté the chicken over medium-high heat until browned, about 5-7 minutes. Remove from the pan and set aside.
3. 3. In the same skillet, sauté the leeks and garlic until softened, about 5 minutes.
4. 4. Add the cooked chicken, thyme, cream, salt, and pepper to the skillet. Stir to combine.
5. 5. Pour the filling into a 9-inch pie dish lined with the pre-made pie crust.
6. 6. Top with the remaining pie crust and crimp the edges to seal.
7. 7. Cut several slits in the top crust to allow steam to escape.
8. 8. Bake for 30-35 minutes, or until the crust is golden brown.
9. 9. Let cool for 10 minutes before slicing and serving.
Notes
For a flakier crust, you can use a homemade pie dough recipe. You can also add a sprinkle of shredded cheese on top of the filling before adding the top crust.
