Indulge in the velvety texture and rich pumpkin flavor of this Creamy Pumpkin Chia Pudding. A nutritious and versatile treat that’s perfect for breakfast, snacking, or dessert.

Ingredients

– 1 cup unsweetened almond milk

– 1/2 cup canned pumpkin puree

– 3 tablespoons chia seeds

– 2 tablespoons maple syrup

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground ginger

– 1/4 teaspoon ground nutmeg

Instructions

1. – In a medium bowl, whisk together the almond milk, pumpkin puree, chia seeds, maple syrup, cinnamon, ginger, and nutmeg until well combined.

2. – Cover the bowl and refrigerate for at least 4 hours or up to 5 days, stirring occasionally, until the chia seeds have thickened the pudding.

3. – Serve chilled, garnished with additional cinnamon, chopped pecans, or a drizzle of maple syrup, if desired.

Notes

This pumpkin chia pudding can be made ahead of time and stored in the refrigerator for up to 5 days. The consistency will thicken as it sits. For a thinner pudding, add more almond milk before serving.
