Ingredients
– 1 cup fresh spinach, chopped
– 4 oz cream cheese, softened
– 1/2 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1 egg, beaten
– 1/4 tsp garlic powder
– 1/4 tsp salt
– 1/8 tsp black pepper
Instructions
1. – Preheat oven to 400°F. Grease a mini muffin tin.
2. – In a medium bowl, mix together the chopped spinach, cream cheese, cheddar cheese, Parmesan cheese, egg, garlic powder, salt, and black pepper until well combined.
3. – Scoop the spinach mixture evenly into the prepared mini muffin tin, filling each cup about 3/4 full.
4. – Bake for 12-15 minutes, or until the puffs are golden brown and set.
5. – Remove from the oven and let cool for 5 minutes before serving.
Notes
These Creamy Spinach Puffs can be made ahead of time and reheated before serving. They also freeze well for up to 3 months.
