Ingredients
– 1 pound cheese tortellini pasta
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 pint cherry tomatoes, halved
– 4 cups fresh spinach, roughly chopped
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese, plus more for serving
– 1/4 cup chopped fresh basil
– Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.
3. Add the cherry tomatoes and sauté for 2-3 minutes until they start to soften.
4. Add the chopped spinach and cook for 1-2 minutes until wilted.
5. Pour in the heavy cream and stir to combine. Bring the mixture to a gentle simmer.
