This Creamy Taco Soup is a comforting and flavorful dish that’s perfect for busy weeknights. With a rich, creamy broth and classic taco flavors, it’s a family-friendly meal that comes together in just 20 minutes.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 packet taco seasoning
– 1 can (15 oz) tomato sauce
– 1 can (15 oz) diced tomatoes
– 1 can (15 oz) black beans, rinsed and drained
– 1 can (15 oz) pinto beans, rinsed and drained
– 4 cups chicken broth
– 1 cup heavy cream
– Salt and pepper to taste
– Garnishes: shredded cheese, crushed tortilla chips, chopped cilantro
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes.
2. – Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
3. – Stir in the taco seasoning and cook for 1 minute.
4. – Pour in the tomato sauce, diced tomatoes, black beans, and pinto beans. Add the chicken broth and heavy cream.
5. – Bring the soup to a simmer and let it cook for 10-15 minutes, stirring occasionally, until the flavors have melded.
6. – Season with salt and pepper to taste.
7. – Serve the Creamy Taco Soup hot, garnished with shredded cheese, crushed tortilla chips, and chopped cilantro.
Notes
For a spicier soup, add diced jalapeños or a pinch of cayenne pepper. You can also use ground turkey or chicken instead of beef. Leftovers can be stored in the refrigerator for up to 4 days.
