Description

This Creamy Tortellini and Spinach Soup is a cozy, comforting dish that’s easy to make and packed with flavor. Tender cheese-filled tortellini, fresh spinach, and a rich, velvety broth come together for a delicious meal that’s ready in just 30 minutes.


Ingredients

– 1 tablespoon olive oil

– 1 small onion, diced

– 3 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 1 (9 oz) package cheese tortellini

– 4 cups fresh spinach, roughly chopped

– 1 cup heavy cream

– 1 teaspoon dried basil

– 1/2 teaspoon dried thyme

– 1/4 teaspoon red pepper flakes (optional)

– Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

2. Add the minced garlic and sauté for an additional minute, until fragrant.

3. Pour in the broth and bring to a simmer. Add the tortellini and cook for 5-7 minutes, until the tortellini is tender.

4. Stir in the fresh spinach and heavy cream. Simmer for 2-3 minutes, until the spinach is wilted.

5. Season with dried basil, dried thyme, red pepper flakes (if using), salt, and pepper.

6. Serve the creamy tortellini and spinach soup hot, with crusty bread on the side.

Notes

For a thicker, creamier soup, you can blend a portion of the soup with an immersion blender before adding the spinach. This will create a more velvety texture. You can also use frozen tortellini if fresh is not available. Adjust seasoning to taste.
