Description

This Creamy Tuscan Chicken (One Pan) dish is a flavor explosion! Tender chicken breasts are simmered in a rich, creamy sauce with sun-dried tomatoes, spinach, and Parmesan cheese for a delicious 30-minute meal.


Ingredients

– 1 pound boneless, skinless chicken breasts

– 2 tablespoons olive oil

– 1 tablespoon minced garlic

– 1 cup heavy cream

– 1/2 cup grated Parmesan cheese

– 1/2 cup sun-dried tomatoes, chopped

– 2 cups baby spinach

– 1/4 cup fresh basil leaves, chopped

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Season the chicken breasts with salt and pepper.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until browned and cooked through. Remove the chicken from the skillet and set aside.

3. In the same skillet, add the garlic and cook for 1 minute until fragrant.

4. Pour in the heavy cream and Parmesan cheese. Whisk to combine and let the sauce simmer for 2-3 minutes until thickened.

5. Add the sun-dried tomatoes and spinach to the sauce. Cook for 2-3 minutes, stirring occasionally, until the spinach is wilted.

6. Return the cooked chicken to the skillet and spoon the creamy sauce over the top. Garnish with fresh basil.

7. Serve the Creamy Tuscan Chicken immediately, over pasta, rice, or with a fresh salad.

Notes

This dish can also be made with boneless, skinless chicken thighs. For a little extra flavor, you can add 1 teaspoon of dried Italian seasoning to the sauce. Leftovers can be stored in the refrigerator for up to 3 days.
