Ingredients

– 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

– 1 lb fresh okra, trimmed and sliced into 1-inch pieces

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tbsp Creole seasoning

– 1 cup chicken broth

– 1 (14.5 oz) can diced tomatoes

– 2 tbsp olive oil

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. 1. In a large skillet, heat the olive oil over medium-high heat.

2. 2. Add the chicken and cook for 3-4 minutes, until lightly browned.

3. 3. Add the onion and garlic and cook for 2-3 minutes, until fragrant.

4. 4. Stir in the Creole seasoning and cook for 1 minute.

5. 5. Add the okra, diced tomatoes, and chicken broth. Bring to a simmer.

6. 6. Reduce heat to medium-low and let the mixture simmer for 15-20 minutes, or until the chicken is cooked through and the okra is tender.

7. 7. Season with salt and pepper to taste.

8. 8. Garnish with chopped parsley and serve hot, over rice or with crusty bread.

Notes

– For a spicier dish, add an extra 1-2 tsp of Creole seasoning.

– This recipe can also be made with boneless, skinless chicken breasts.

– Leftovers can be stored in the refrigerator for up to 4 days.
