Ingredients

– 1 pound white fish fillets (such as tilapia or cod), cut into 1-inch pieces

– 1 cup all-purpose flour

– 1 cup beer

– 2 eggs, beaten

– 1 cup panko breadcrumbs

– 1 teaspoon paprika

– 1 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 cups shredded cabbage

– 1/4 cup chopped fresh cilantro

– 2 tablespoons lime juice

– 1/4 cup mayonnaise

– 12 small corn tortillas


Instructions

1. In a shallow bowl, whisk together the flour, beer, and eggs until a smooth batter forms.

2. In a separate shallow bowl, mix together the panko breadcrumbs, paprika, garlic powder, salt, and pepper.

3. Dip the fish pieces into the beer batter, allowing any excess to drip off. Then, coat the battered fish in the breadcrumb mixture, pressing gently to adhere.

4. In a large skillet, heat 1/2 inch of oil over medium-high heat. Fry the battered fish in batches for 2-3 minutes per side, until golden brown and crispy.

5. In a medium bowl, toss the shredded cabbage, cilantro, and lime juice.

6. Spread a small amount of mayonnaise on each corn tortilla, then top with a piece of crispy beer battered fish and the cabbage slaw.

Notes
