Crispy Chicken Taquitos are a delightful and easy-to-make appetizer or meal that everyone will love. These taquitos feature juicy, shredded chicken wrapped in crispy tortillas and baked to perfection. Serve them with your favorite dipping sauces for a mouthwatering experience.
Ingredients
– 2 cups shredded cooked chicken
– 1 cup shredded cheddar cheese
– 1/2 cup diced onion
– 2 cloves garlic, minced
– 1 teaspoon chili powder
– 1/2 teaspoon cumin
– 1/4 teaspoon salt
– 12 small corn or flour tortillas
– 2 tablespoons olive oil
Instructions
1. Preheat oven to 400°F (200°C).
2. In a medium bowl, mix together the shredded chicken, cheddar cheese, onion, garlic, chili powder, cumin, and salt until well combined.
3. Lay the tortillas on a flat surface. Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla.
4. Tightly roll up the tortillas and place them seam-side down on a baking sheet.
5. Brush the tops of the taquitos with the olive oil.
6. Bake for 15-20 minutes, or until the tortillas are crispy and golden brown.
7. Serve the crispy chicken taquitos warm, with your favorite dipping sauces on the side.
Notes
For extra crispiness, you can fry the taquitos in oil for 1-2 minutes per side instead of baking them.
