Description
Indulge in the irresistible flavors of this Crispy Lemon Pepper Chicken Sandwich, a quick and easy-to-make recipe that delivers restaurant-quality taste. Juicy, seasoned chicken breasts are coated in a crispy breadcrumb crust and served on soft, toasted buns with fresh lettuce and tomato.
Ingredients
– 4 boneless, skinless chicken breasts
– 1/2 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup panko breadcrumbs
– 2 tablespoons lemon pepper seasoning
– 1/2 teaspoon salt
– 4 brioche or sesame seed buns, toasted
– 4 leaves of lettuce
– 4 slices of tomato
Instructions
1. 1. Pound the chicken breasts to an even thickness, about 1/2 inch thick.
2. 2. Set up a breading station with three shallow dishes: one with the flour, one with the beaten eggs, and one with the panko breadcrumbs mixed with the lemon pepper seasoning and salt.
3. 3. Dredge the chicken breasts in the flour, then dip them in the egg, and finally coat them in the seasoned breadcrumbs, pressing to adhere.
4. 4. In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat. Fry the breaded chicken for 3-4 minutes per side, or until golden brown and cooked through.
5. 5. Drain the chicken on a paper towel-lined plate.
6. 6. Assemble the sandwiches by placing a fried chicken breast on each toasted bun, then top with a lettuce leaf and a tomato slice.
Notes
For a spicier version, add a pinch of cayenne pepper to the breadcrumb mixture. The chicken can also be baked in the oven at 400°F for 20-25 minutes instead of frying.
