Description

Ingredients

– 3 lbs Russet potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 1 cup heavy cream


Instructions

1. – Add the diced potatoes, onions, and garlic to a crockpot.

2. – Pour in the chicken broth and stir to combine.

3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are very soft.

4. – Using a potato masher or immersion blender, mash about half of the potatoes to thicken the soup.

5. – Stir in the heavy cream and season with salt and pepper to taste.

6. – Serve hot, garnished with crispy bacon, shredded cheddar cheese, and chopped green onions.

Notes

– For a thicker soup, mash more of the potatoes.
