Ingredients

– 1 pound boneless, skinless chicken breasts or beef chuck roast, shredded

– 2 cups long grain white rice

– 1 (15 oz) can black beans, drained and rinsed

– 1 onion, diced

– 1 red bell pepper, diced

– 3 cloves garlic, minced

– 2 teaspoons ground cumin

– 1 teaspoon dried oregano

– 1 cup chicken or beef broth

– Salt and black pepper to taste

– Chopped fresh cilantro for garnish

– Lime wedges for serving


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet or Dutch oven, sauté the onion and bell pepper over medium heat until softened, about 5-7 minutes.

3. Add the garlic and cook for an additional minute, until fragrant.

4. Stir in the shredded chicken or beef, black beans, rice, cumin, oregano, and broth. Season with salt and black pepper to taste.

5. Transfer the mixture to a 9×13 inch baking dish and cover with foil.
