Ingredients
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 cans (15 oz each) white beans, drained and rinsed
– 4 cups low-sodium chicken broth
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp ground coriander
– 1/4 tsp cayenne pepper (or to taste)
– Salt and black pepper to taste
– Fresh cilantro for garnish
– Lime wedges for serving
Instructions
1. In a large pot or Dutch oven, sauté the diced onion in a bit of olive oil over medium heat until softened, about 5 minutes.
2. Add the minced garlic and continue cooking for 1 minute, until fragrant.
3. Add the diced chicken and cook, stirring occasionally, until the chicken is lightly browned, about 5-7 minutes.
4. Stir in the cumin, oregano, coriander, and cayenne pepper. Cook for 1 minute to toast the spices.
5. Pour in the chicken broth and white beans. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the chicken is cooked through and the flavors have melded.
6. Season with salt and black pepper to taste.
7. Serve the dairy free white chicken chili hot, garnished with fresh cilantro and accompanied by lime wedges.
Notes
For a thicker chili, you can blend a portion of the beans before adding them back to the pot. You can also adjust the spice level by adding more or less cayenne pepper to suit your preferences.
