Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup granulated sugar
– 1 egg yolk
– 1/4 cup cold water
– 8 ounces dark chocolate, chopped
– 1/2 cup heavy cream
– 2 tablespoons unsalted butter, softened
– 1/4 cup granulated sugar
– 2 eggs
– Pinch of salt
– Sheets of edible gold leaf
Instructions
1. In a food processor, pulse the flour, butter, and 1/4 cup sugar until mixture resembles coarse crumbs.
2. Add the egg yolk and water, and pulse until the dough just begins to come together.
3. Shape the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
4. Preheat the oven to 375°F. Roll out the dough and press it into a 9-inch tart pan with a removable bottom.
5. Bake the tart shell for 15-20 minutes, until lightly golden. Allow to cool completely.
6. In a medium saucepan, heat the cream and 2 tablespoons butter over medium heat, stirring occasionally, until simmering.
7. Remove from heat and stir in the chopped dark chocolate until smooth and melted.
8. Whisk in the 1/4 cup sugar and eggs until well combined.
9. Pour the chocolate filling into the cooled tart shell and refrigerate for at least 2 hours, or until set.
10. Carefully remove the tart from the pan and top with the edible gold leaf, gently pressing it onto the surface.
11. Slice and serve immediately, or refrigerate until ready to serve.
