Ingredients
– 12 hard-boiled eggs
– 1/2 cup mayonnaise
– 2 tablespoons Dijon mustard

– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup panko breadcrumbs
– Vegetable oil for frying
Instructions
1. – Carefully peel the hard-boiled eggs and cut them in half lengthwise.
2. – In a medium bowl, mix the mayonnaise, mustard, paprika, salt, and pepper until well combined.
3. – Carefully spoon or pipe the filling into the egg white halves.
4. – Set up a breading station with the flour, beaten eggs, and panko breadcrumbs in separate shallow dishes.
5. – Dredge the filled egg halves in the flour, dip them in the beaten eggs, and then coat them in the panko breadcrumbs, pressing gently to adhere.
