Description

Homemade dill pickle focaccia bread is a savory and satisfying quick bread that’s perfect for snacking, serving with soups, or as a side dish. Loaded with tangy dill pickle slices and a crispy, golden-brown crust, this bread is sure to be a hit.


Ingredients

– 3 cups (375g) all-purpose flour

– 1 teaspoon salt

– 1 teaspoon active dry yeast

– 1 1/4 cups (295ml) warm water

– 1/4 cup (60ml) olive oil, plus more for drizzling

– 1 cup (170g) diced dill pickles


Instructions

– In a large bowl, combine the flour, salt, and yeast. Add the warm water and olive oil, and stir until a shaggy dough forms.

– Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.

– Place the dough in a lightly greased bowl, cover, and let rise for 30 minutes.

– Punch down the dough and press it into a greased 9×13-inch baking pan. Use your fingers to dimple the surface of the dough.

– Scatter the diced dill pickles evenly over the top of the dough.

– Drizzle the top with additional olive oil and sprinkle with a little extra salt, if desired.

– Bake at 400°F (200°C) for 25-30 minutes, until the crust is golden brown.

– Let the focaccia cool for 5 minutes before slicing and serving.

Notes

For best results, use high-quality dill pickles that are crisp and flavorful. You can also experiment with different herbs or toppings to customize the focaccia to your liking.
