Description

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, chilled and cubed

– 1/2 teaspoon salt

– 1/4 cup ice water

– 3 ripe dragon fruits, peeled and sliced

– 1/2 cup granulated sugar

– 2 tablespoons cornstarch

– 1 teaspoon lemon juice


Instructions

1. In a food processor, pulse the flour, butter, and salt until the mixture resembles coarse crumbs.

2. Add the ice water and pulse until the dough just begins to come together. Divide the dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.

3. Preheat the oven to 375°F.

4. On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Gently transfer the dough to the pie plate and trim the edges, leaving a 1-inch overhang.

5. In a large bowl, toss the dragon fruit slices, sugar, cornstarch, and lemon juice until well combined. Pour the filling into the prepared pie crust.

6. Roll out the remaining dough and cut into 1/2-inch wide strips. Arrange the strips in a lattice pattern over the filling.

7. Bake the pie for 40-45 minutes, or until the crust is golden brown and the filling is bubbling. Allow to cool completely before slicing and serving.

Notes

For a more vibrant color, you can use a combination of red and yellow dragon fruits. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
