Ingredients
– 4 ripe bananas, mashed
– 1/2 cup dark rum
– 1/2 cup brown sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
Instructions
1. In a medium saucepan, combine the mashed bananas, dark rum, brown sugar, cinnamon, nutmeg, cloves, and salt.
2. Bring the mixture to a simmer over medium heat, stirring frequently, until thickened to a jam-like consistency, about 10-15 minutes.
3. Remove the pan from heat and let the jam cool slightly.
4. Transfer the Drunken Monkey Banana Rum Jam to clean jars or containers. Refrigerate for up to 2 weeks.
Notes
For a thicker jam, cook the mixture for a few minutes longer. The jam can also be used as a topping for pancakes, waffles, or ice cream. Store any leftovers in the refrigerator.
