Ingredients
– 1 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup milk
– 1/2 cup chopped pistachios, plus more for topping
Instructions
1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
3. In a large bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Fold in the 1/2 cup of chopped pistachios.
5. Pour the batter into the prepared baking pan and spread it evenly. Sprinkle the top with additional chopped pistachios.
6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before cutting and serving.
