Ingredients
– 2 English cucumbers, sliced
– 1 carrot, julienned
– 1 avocado, diced
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon sesame oil
– 1 teaspoon sesame seeds
– Salt and pepper to taste
Instructions
1. – Slice the cucumbers into thin rounds and place in a large bowl.
2. – Add the julienned carrots and diced avocado.
3. – In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil.
4. – Pour the dressing over the salad and toss gently to coat.
5. – Sprinkle the sesame seeds on top.
6. – Season with salt and pepper to taste.
7. – Chill in the refrigerator for at least 10 minutes before serving.
Notes
For a more authentic California roll flavor, you can add a small amount of imitation crab or chopped nori. This salad is also delicious with thinly sliced red onion or chopped green onions.
