Ingredients
– 3 medium green apples, cored and diced
– 1/2 cup chopped walnuts, toasted
– 2 tablespoons lemon juice
– 2 tablespoons honey
– 1/4 cup plain Greek yogurt
– 1 tablespoon apple cider vinegar
– 1/4 teaspoon ground cinnamon
– 1/8 teaspoon ground nutmeg
– Pinch of salt
Instructions
1. In a large bowl, toss the diced apples with the lemon juice to prevent browning.
2. Toast the walnuts in a dry skillet over medium heat for 2-3 minutes, stirring occasionally, until fragrant and lightly browned. Allow to cool.
3. In a small bowl, whisk together the honey, yogurt, apple cider vinegar, cinnamon, nutmeg, and salt.
4. Add the toasted walnuts to the apples and toss to combine.
5. Drizzle the dressing over the salad and gently toss to coat.
6. Serve immediately or refrigerate until ready to serve.
Notes
For a creamier dressing, use full-fat Greek yogurt. You can also add a handful of baby spinach or arugula for extra nutrition. This salad keeps well in the refrigerator for up to 3 days.
