Description

Ingredients

– 3 cups old-fashioned rolled oats

– 1 cup raw almonds, chopped

– 1/2 cup raw pecans, chopped

– 1/4 cup ground flaxseed

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground ginger

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

– 1/2 cup maple syrup

– 1/4 cup coconut oil, melted

– 1 teaspoon vanilla extract


Instructions

1. – Preheat the oven to 325°F (165°C). Line a large baking sheet with parchment paper.

2. – In a large bowl, combine the rolled oats, chopped almonds, chopped pecans, ground flaxseed, cinnamon, ginger, nutmeg, and salt. Stir to mix well.

3. – In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.

4. – Pour the wet ingredients over the dry ingredients and stir until the oat mixture is evenly coated.

5. – Spread the granola mixture onto the prepared baking sheet in an even layer.

6. – Bake for 20-25 minutes, stirring halfway, until the granola is golden brown and fragrant.

7. – Remove the granola from the oven and let it cool completely on the baking sheet before transferring to an airtight container.

Notes

For extra crunch, add 1/2 cup of unsweetened shredded coconut or chopped walnuts to the granola mixture. Store the cooled granola in an airtight container at room temperature for up to 2 weeks.
