Ingredients
– 1 lb rigatoni pasta
– 1 cup crumbled feta cheese
– 1 cup dried cranberries
– 1 cup diced cucumber
– 1/2 cup sliced red onion
– 1/4 cup chopped fresh parsley
– 1/4 cup olive oil
– 2 tbsp lemon juice
– 1 tbsp Dijon mustard
– 1 garlic clove, minced
– 1 tsp honey
– Salt and pepper to taste
Instructions
1. Cook the rigatoni according to package instructions. Drain and rinse with cold water to cool.
2. In a large bowl, combine the cooked rigatoni, feta cheese, dried cranberries, diced cucumber, sliced red onion, and chopped parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, and honey. Season with salt and pepper to taste.
4. Pour the lemon vinaigrette over the salad and toss gently to coat.
