Description

This French Onion Chicken Orzo Casserole is a comforting and flavor-packed one-dish meal that’s perfect for busy weeknights. Tender chicken, caramelized onions, and a creamy, cheesy sauce come together with orzo pasta for a satisfying and delicious dish.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

– 2 tablespoons olive oil

– 3 large yellow onions, thinly sliced

– 3 cloves garlic, minced

– 2 cups uncooked orzo pasta

– 2 cups low-sodium chicken broth

– 1 cup heavy cream

– 1 cup shredded Swiss cheese

– 1/2 cup grated Parmesan cheese

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet, heat the olive oil over medium-low heat. Add the sliced onions and cook for 20-25 minutes, stirring occasionally, until the onions are caramelized and golden brown.

3. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.

4. In a large bowl, combine the caramelized onions and garlic, chicken, uncooked orzo, chicken broth, heavy cream, Swiss cheese, Parmesan cheese, thyme, salt, and pepper. Stir until well mixed.

5. Transfer the mixture to a 9×13 inch baking dish. Cover with foil and bake for 30 minutes.

6. Remove the foil and bake for an additional 10-15 minutes, or until the orzo is tender and the top is golden brown.

7. Let the casserole cool for 5 minutes before serving. Enjoy!

Notes

This casserole can be made ahead of time and refrigerated or frozen for later use. Simply reheat in the oven when ready to serve.
