Ingredients

– 4 large yellow onions, thinly sliced

– 2 tablespoons unsalted butter

– 2 tablespoons olive oil

– 4 garlic cloves, minced

– 1/2 cup dry white wine

– 4 cups beef broth

– 2 sprigs fresh thyme

– 1 bay leaf

– Salt and pepper to taste

– 8 slices French bread or baguette

– 2 cups shredded Gruyère cheese


Instructions

1. – In a large pot or Dutch oven, melt the butter and olive oil over medium-low heat.

2. – Add the sliced onions and cook, stirring occasionally, for 30-40 minutes until deeply caramelized and golden brown.

3. – Stir in the minced garlic and cook for 2 more minutes.

4. – Deglaze the pot with the white wine, scraping up any browned bits from the bottom.

5. – Add the beef broth, thyme, and bay leaf. Season with salt and pepper.

6. – Bring the soup to a simmer and let it cook for 15-20 minutes to allow the flavors to meld.

7. – Preheat the oven to 400°F.

8. – Arrange the slices of French bread on a baking sheet and toast them in the oven for 5-7 minutes, until golden brown.

9. – Ladle the French onion soup into oven-safe bowls and top each with a toasted bread slice.

10. – Sprinkle the Gruyère cheese over the top.
