Ingredients

– 8 oz cream cheese, softened

– 1/2 cup granulated sugar

– 1 egg

– 1 tsp vanilla extract

– 1 cup fresh strawberries, diced

– 8 slices bread or fried dough pieces

– Vegetable oil for frying

– Powdered sugar for dusting


Instructions

1. 1. In a medium bowl, beat the cream cheese and sugar until smooth and creamy.

2. 2. Add the egg and vanilla extract, and mix until well combined.

3. 3. Fold in the diced strawberries.

4. 4. Place a spoonful of the cheesecake mixture onto 4 slices of bread (or fried dough pieces).

5. 5. Top with the remaining 4 slices of bread (or fried dough pieces) to create sandwiches.

6. 6. In a large skillet or Dutch oven, heat 2-3 inches of vegetable oil to 350°F.

7. 7. Carefully add the sandwiches to the hot oil and fry for 2-3 minutes per side, or until golden brown.

8. 8. Remove the fried sandwiches from the oil and drain on a paper towel-lined plate.

9. 9. Dust the warm fried strawberry cheesecake sandwiches with powdered sugar and serve immediately.

Notes

For best results, use fresh, ripe strawberries. The cheesecake filling can also be made ahead of time and refrigerated until ready to assemble the sandwiches. Adjust frying time as needed, depending on the thickness of your bread or fried dough.
