These Garlic Butter Zucchini Skewers are a delicious and easy-to-make vegetable side dish. Tender zucchini is coated in a mouthwatering garlic butter glaze and grilled to perfection.
Ingredients
– 3 medium zucchini, sliced into 1-inch chunks
– 4 tablespoons unsalted butter, melted
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. – Preheat grill or grill pan to medium-high heat.
2. – In a small bowl, whisk together the melted butter, garlic, oregano, salt, and pepper.
3. – Thread the zucchini chunks onto skewers, leaving a little space between each piece.
4. – Brush the zucchini skewers generously with the garlic butter mixture.
5. – Grill the skewers for 12-15 minutes, turning occasionally, until zucchini is tender and lightly charred.
6. – Serve the Garlic Butter Zucchini Skewers warm, garnished with fresh parsley if desired.
Notes
For best results, use firm, fresh zucchini. You can also bake these skewers in the oven at 400°F for 18-20 minutes. Adjust cooking time as needed based on thickness of zucchini.
