Ingredients
– 12-16 lb whole turkey, thawed
– 1 cup unsalted butter, softened
– 4 cloves garlic, minced
– 2 tbsp fresh thyme, chopped
– 2 tbsp fresh rosemary, chopped
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. 1. Preheat oven to 325°F.
2. 2. In a small bowl, mix together the softened butter, garlic, thyme, rosemary, salt, and pepper until well combined.
3. 3. Carefully loosen the skin of the turkey and spread half of the garlic herb butter underneath, massaging it into the meat.
4. 4. Rub the remaining garlic herb butter all over the outside of the turkey.
5. 5. Truss the turkey and place it on a rack in a large roasting pan.
6. 6. Roast for 2.5-3 hours, basting every 30 minutes, until the internal temperature reaches 165°F in the thickest part of the breast.
7. 7. Allow the turkey to rest for 30 minutes before carving and serving.
Notes
For a crispier skin, pat the turkey dry with paper towels before rubbing on the herb butter. You can also add aromatics like onions, celery, and additional herbs to the roasting pan. Leftovers make amazing turkey sandwiches or can be used in soups and casseroles.
