Description

These Garlic Rosemary Focaccia Muffins are a quick and easy way to enjoy the flavors of homemade focaccia bread. Soft, fluffy, and packed with fragrant herbs, they make a delightful side or snack.


Ingredients

– 2 cups all-purpose flour

– 1 teaspoon instant yeast

– 1 teaspoon salt

– 1 cup warm water

– 2 tablespoons olive oil, plus more for brushing

– 2 cloves garlic, minced

– 2 tablespoons fresh rosemary, chopped


Instructions

1. Preheat the oven to 400°F. Grease a 12-cup muffin tin.

2. In a large bowl, combine the flour, yeast, and salt. Add the warm water and 2 tablespoons of olive oil, and stir until a shaggy dough forms.

3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

4. Divide the dough into 12 equal pieces and place each piece into a muffin cup. Cover and let rise for 15 minutes.

5. Brush the tops of the muffins with olive oil and sprinkle with the minced garlic and chopped rosemary.

6. Bake for 15-18 minutes, until golden brown. Serve warm.

Notes

For extra flavor, try adding grated Parmesan cheese or crushed red pepper flakes to the topping. These muffins are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
